Vineyard
Situated on the alluvial fan of the Savigny-les-Beaune valley, this parcel of vines grows on alluvial, stony soils mixed with marl limestone. The vines are between 45 to 50 years old
Vinification
After harvesting by hand, carried out when the grapes have reached full maturity, the grapes are gently pressed in a pneumatic press. The must is left to settle overnight and then put into barrels (which have been used 2 to 4 times previously). The fermentation starts naturally using indigenous yeast and bacteria. After being racked 9 months later, the wines undergo a fine filtration using a membrane filter of 5μ and are then bottled by gravity
Tasting note
This accessible wine shows good balance between its maturity and its fruit content. It is smooth and full-bodied, with an enjoyably long finish.
Aging
5 to 7 years (stored in the right temperature and humidity conditions).
