Côte de Nuits Villages "Réserve de la Comtesse"
Located on a beautiful south-facing plot, close to the Chevalier-Montrachet, the 40 year old vines are on very chalky and stony soils with a good slope.
After a manual harvest when ripe, the grapes are delicately pressed with a pneumatic press. The juice is then settled overnight and put into barrels, 50% of which are new. They start their fermentation with indigenous yeasts and bacteria. After racking 9 months later, the wines undergo a roughing filtration on a 5µ membrane and are then bottled by gravity.
Discreet in its youth, this wine needs time to reveal itself. On the palate, a nice tension and mineral aromas of gunflint.
10 to 12 years (in good temperature and humidity conditions).
