Vineyard
Situated in the upper slopes of Ladoix, this east facing parcel of vines has fairly deep soils, composed of a mix of white marl and clay. The vines are 30 years old.
Vinification
After harvesting by hand, carried-out when the grapes have reached full maturity, the grapes are gently pressed in a pneumatic press. The must is left to settle overnight and put into barrels (which have been used 2 to 4 times previously). The fermentation starts naturally using indigenous yeast and bacteria. After having been racked 9 months later, the wines undergo a fine filtration using a membrane filter of 5μ and are then bottled by gravity.
Tasting note
On the nose there are aromas of white flowers and vine peaches, with underlying mineral and toasty notes. On the palate, the wine is flavoursome and mouth-watering, with aromas of grapefruit and mellow oak. Lemony, flinty notes give the wine a light saline touch.
Aging
6 to 8 years (stored in the right temperature and humidity conditions).
