Vineyard
The parcel of vines is found in the village of Puligny-Montrachet, heading towards Chassagne-Montrachet. The vines are between 55 - 60 years old and grow on deep clay soils.
Vinification
After harvesting by hand, carried-out when the grapes have reached full maturity, the grapes are gently pressed in a pneumatic press. The must is settled overnight and put into barrels, 30% new oak. The fermentation starts naturally using indigenous yeast and bacteria. After being racked 14 months later, the wine undergoes a fine filtration using a membrane filter of 5μ and is then bottled by gravity.
Tasting note
Pure, intense, aromas with mineral notes, and touches of lightly toasted hazelnut and lemon. The palate has a good structure and purity, with great length and a long, elegant finish - a wine for ageing.
Aging
8 to 10 years (stored in the right temperature and humidity conditions).
